Structured data is a set of hidden labels attached to a page that spell out what's on it. On a product page, it can say "this is a product, it costs $12, and it has 4.5 stars from 30 reviews" in a form a machine reads perfectly. Your page looks the same to a shopper — the labels are for the search engines and AI.
